Homemade Apple Strudel with Rum Raisins

 With the new year comes new goals and resolutions. I have some of the same ones I usually have; get fit, stop bad habits, develop positive ones....the typical resolutions you usually hear. But this year I have decided to create a baking bucket list. I got inspired when I noticed that I watched The Great British Baking Show, I always found myself saying, "what is that? I've never heard of that!" or "I have GOT to try that!" Every season, every episode, I find myself blown away by the home bakers and their beautiful and technically challenging desserts, breads, and biscuits. There are so many things I want to try my hand at, and so I've decided to created a list and work at checking them off throughout 2022. I will share my baking bucket list in a future blog post and give updates throughout the year so readers can track the progress. Maybe some of you will get inspired and attempt some of these new treats with me!

One item has already been striked off the list, and that is strudel! I don't recall ever having strudel before but my husband has been on business trips to Austria in the past and would always come home raving about the food. I remember on night he called me from his hotel room going on and on about apple strudel. I'm just use to tossing my apples in a pie or apple cake, so I figured why not try something different. I found several recipes that intrigued me and eventually decided to combine bits and pieces from several of them while also adding some of my own flair. And so I give to you this recipe for homemade apple strudel with rum raisins. (There's something else I've never done before, soaking raisins in rum and baking with them!)

A quick note for those opposed to alcohol, you can skip soaking the rum in the raisins! I would still recommend reconstituting the raisins by soaking them in hot water for about 20 minutes. Also, if you don't have any rum extract for the glaze, no worries, add more maple! No maple? Vanilla extract will do you just fine in this recipe!
